Elizabeth has always had a true passion for animals of all shapes and sizes. Growing up, she has had beagles, a chihuahua, a miniature pinscher, a stray cat, and dozens of lizards including an Iguana named Bart that she would walk on a leash around her neighborhood. She also raised two chickens that she named Lucy and Howard who resided in her childhood garage. Most recently, Elizabeth has become heavily involved in greyhound rescue. She currently has two rescued retired racing greyhounds, Phoebe and Sammy. She volunteers for Greyhounds Only based in Carol Stream by fostering and assisting newly retired greyhounds get acclimated when they arrive here from racetracks from all over the country. She and her husband spoil them rotten and couldn’t imagine life without them. They are even planning to adopt a third greyhound!
After a lengthy and successful career as a pastry chef downtown, Elizabeth chose to depart from the food industry to spend more time with her hounds and pursue a career where she could work with and care for animals. In addition to spending her time giving love and attention to all her furry friends throughout the day at Prairie Path, Elizabeth loves that she shares that passion with a team of others that do as well!
